Vanilla Latte Buttercream

(See also Starbucks Cake)

  • 1 cup unsalted butter, at room temperature (very important)
  • 6 tsp. vanilla extract
  • 1/2 tsp. salt
  • 32 oz. powdered sugar
  • 3 tbsp. milk
  • 3 tbsp. instant coffee

In an electric mixer, cream butter.  Add vanilla extract and mix until slightly combined.  Add in half of the powdered sugar little by little, making sure to completely incorporate it all between additions (or you will have grainy icing).  Next combine instant coffee and milk in a separate container.  Add in milk mixture and remaining powdered sugar alternately, again, making sure to completely combine all the ingredients each time.  Finish with a splash of (unaltered) milk.  Makes about 2 cups.
